Falafel pitta
Fancy something a little different for lunch? How about a delicious mint yogurt, spinach and falafel pitta bread?
1. Heat the pitta (toast/oven/grill)
2. Heat the falafel (if you're in a rush, 30 seconds in the microwave will do it, if not put them in the oven for 5. minutes)
3. mix the low fat greek yoghurt with the mint jelly and add to the pitta bread
4. Add the falafel and the spinach
5. Enjoy

3 x falafel balls
1 tbsp of low fat greek yoghurt
1 tsp of mint jelly
handful of spinach
